Canning Green Beans: Pressure Times and the Botulism Line
A quart of store-brand canned green beans runs about $2.30. The same quart from garden surplus costs roughly 45 cents in lid, salt and electricity — and needs 25 minutes at 11 PSI before it is safe rather than merely sealed. Snap beans measure near pH 5.4, on the low-acid side of the 4.6 line, where Clostridium botulinum grows inside a sealed jar without touching the smell, the color or the seal. That measurement decides every step below.
Why 212°F does nothing here
Boiling water holds at 212°F at sea level no matter how long the burner stays on, and botulinum spores tolerate that temperature for hours. Steam under pressure breaks the deadlock: 10 to 11 PSI lifts the interior of a jar to 240°F, and the tested process times are built on that figure. The pH 4.6 rule sorts foods into two piles, and snap beans sit far on the wrong side — published acidity tables put fresh green beans between 5.4 and 5.7.
Of the 145 foodborne botulism outbreaks the CDC traced to home-prepared foods between 1996 and 2014, 43 — about 30 percent — came from home-canned vegetables, the largest single category. Toxin does not bubble, cloud or stink reliably, so a jar that looks perfect proves nothing.
Acidifying is no escape hatch. Pickled dilly beans are a separately tested recipe that uses enough vinegar to pull the finished jar below pH 4.6; plain beans in water have no such shortcut and no NCHFP process for a boiling-water canner.

Four fixed details surround those numbers: 1-inch headspace, bands finger-tight, a full 10-minute vent of live steam before the weight goes on, salt optional at ½ tsp per pint or 1 tsp per quart. Timing starts once the gauge holds target, and a dip below it restarts the process from zero. Dial gauges get tested yearly at a county extension office and replaced when they read more than 1 PSI high.

Cloudy brine is normal here and comes from starch, not spoilage. The produce matters more: filled but tender pods, snapped within a day of picking, diseased ones thrown out rather than trimmed around.
What a load actually costs
A 7-quart load is the working unit: 14 lb of raw beans, about three hours end to end — 50 minutes of snapping, 10 venting, 8 to 12 coming up to pressure, 25 processing, 30 to 45 of unforced cooling — and near 1.3 kWh on a 1,500 W element.

Store cans are priced from 14.5 oz units at $0.98–1.30, scaled to 32 oz. Retail beans canned at home cost more than double the can they replace, and a u-pick haul at $1.00/lb lands at $2.45 — a wash. Only surplus you did not pay for turns a profit.
Where the math works, and where it does not
A $120 canner saving $1.71 to $2.42 a quart against store cans clears its cost at 50 to 70 quarts, or seven to ten loads — realistic for a 30-foot row of bush beans yielding 15 to 25 lb. Price your labor and the picture changes: three hours for seven quarts saves about $12, near $4 an hour. Anyone canning purchased beans is buying control over sodium and texture, not savings, and the better answer there is a freezer — blanched beans take 15 minutes of work per load and skip the pressure question entirely.
Common mistakes, in numbers

- Ignoring altitude. Running 11 PSI at 5,000 ft delivers roughly 235°F, short of the standard the times were written against.
- Skipping the 10-minute vent. Trapped air lets a gauge show target pressure while the interior sits several degrees cooler.
- Using an electric multicooker. USDA processes were validated on stovetop dial and weighted-gauge canners; NCHFP does not endorse multicookers for low-acid foods absent validated processes from the maker.
- Cranking the bands down. Over-tightened rings buckle lids and drive siphoning.
- Tasting to check. NCHFP guidance is 10 minutes of boiling, plus 1 minute per additional 1,000 ft, before serving — and 30 minutes of boiling for any suspect jar and its contents before the trash.
