One tablespoon of salt weighs 10 grams or 20 grams depending on which box is open, and that fact wrecks more first batches than anything else. A jar at 2% salt by weight sours cleanly in three weeks; at 1% it turns soft, and at 6% the bacteria that make the acid stall. The method needs no electricity, gauge or burner — a quart jar, a weight, a room at 70°F. It does need a scale and a way to read the finished acidity.

Short answer: Weigh the salt, do not measure it. Why the tablespoon is the problem

Salt decides which microbes grow: lactic acid bacteria tolerate it, most spoilage organisms do not. That window is narrow enough that a 2x measuring error lands outside it — and a tablespoon is exactly that unreliable, since crystal size sets how much fits in the spoon.

Temperature moves the last column. NCHFP's kraut process assumes 70–75°F for 3 to 4 weeks; at 60–65°F the jar needs 5 to 6, below 60°F it may never start, above 75°F texture collapses before the acid finishes. A basement corner at 68°F beats a sunny counter.

What turns judgment into a number is pH: finished sauerkraut reads 3.4 to 3.6, fermented cucumbers 3.3 to 3.5, kimchi-style batches 4.2 to 4.5. Strips covering 2.8–4.4 cost $9 per 100, nine cents a test. Anything above 4.6 past its window has not fermented, and goes to the compost.

Shelf life, and where this touches canning

A finished ferment has two destinations. Refrigerated at 38°F it keeps 4 to 6 months, live. Shelf-stable takes heat, which is where this crosses into boiling-water canning: fermentation drops the product below pH 4.6, so that method applies here, unlike plain vegetables packed in water.

Read the second column honestly: buying cabbage to replace a $2.60 canned product does not pay. This wins on surplus, and against $5.50–8.00 refrigerated jars either way. How do I know fermentation is finished?

Bubbling stops, the smell turns cleanly sour, and a strip reads 3.4 to 3.6 for kraut. Taste from day 7 onward.
