The catch: grain is perfect food for mushrooms and just as perfect for the bacteria competing for it, so the margin for sloppy work is thin. Everything here lives in that margin — water, pressure, and what a finished quart really costs.

Which grain, and why rye keeps winning

Any small cereal works; what differs is kernel size, how evenly the seed coat takes water, and how many starting points fit in a jar. More points means the mycelium launches from more places at once and reaches a white jar sooner. Rye stays the default because the berries hydrate evenly and stay loose instead of gluing into a brick.

Grain is the carrier, not the crop: it moves a culture from syringe to the bulk material covered in the substrate guide. Injecting straight into bulk skips this step and usually fails — a few millilitres cannot outrun the mould in several pounds of straw.

Hydration: the step that decides the jar

Aim for 45–50% moisture by weight: wet through the kernel, dry outside. Two cups of dry rye — about 14 oz — swells to fill a quart jar two-thirds. Simmer 15–20 minutes until a squeezed berry splits without smearing, drain, then spread it on a towel 30–60 minutes until the surface goes matte. Pooled water is where bacteria win, and pressure does not fix it afterwards. A tablespoon of gypsum per quart stops kernels sticking, for two cents.

Sterilizing: 15 psi, 90 minutes, and why boiling falls short

Grain is nutrient-dense, so it needs true sterilization rather than the hot-water pasteurization plain straw gets. A pressure canner at 15 psi reaches roughly 250°F, the temperature that destroys bacterial endospores — the survival stage that shrugs off a rolling boil at 212°F all afternoon. Quarts filled two-thirds take 90 minutes at pressure; half-gallon jars need 120 minutes or more, since heat travels farther to the centre. Dial gauges need a pressure correction above about 1,000 ft of elevation.

Lids need gas exchange and a contamination barrier at once: a self-healing injection port beside a filter disc, or a 1/4-inch hole covered with micropore tape. Both cost under a dollar per jar and survive many runs. Then cool the load four to eight hours — culture injected at 120°F is a wasted syringe.

Spawn rate into bulk sits between 1:2 and 1:5 by volume.
